Taleggio originated in the Taleggio valley in the Province of Bergamo.
It is a soft cheese with a thin, naturally pinkish rind with pale sage-green to grey mould streaks.
The paste is compact and uniform. It is softer just under the rind and, when it is fully matured, it becomes crumbly in the middle.
The colour ranges from white to straw yellow and the cheese has a few small holes. It is sweet with a slight tartness and has a mild yet distinctive aroma with a truffle finish to the flavour.
