Gorgonzola cheese was recognised by the European Union and included in the list of DOP products in 1996.
The consortium for the protection of Gorgonzola cheese was created by the Italian government and ensures that the standards for Gorgonzola that are applied in Italy are met elsewhere in the world where the “Gorgonzola” designation of origin is protected.
This cheese boasts a truly ancient history and was first made in AD 879 in the town after which it is named near Milan.
There are two types of Gorgonzola. The first is white with a mild and slightly spicy flavour and the second variety, known as due paste (“two curds”) which has blue-green veins and a very distinctive taste.
Nuova Castelli has been making its world famous Gorgonzola at the Novara facility and selling it throughout Europe for years.
